On one such day, I thought of making something interesting. Well, what could be better than a Pizza was the next thought that crossed my mind and I came up with this grain-free pizza recipe. Enjoy!<\/p>\n<h2>Serves<\/h2>\n<p>2 Persons<\/p>\n<h2>Ingredients<\/h2>\n<p>For Pizza base:<\/p>\n<p>1 Cup grated cauliflower (squeezed for excess water)<br \/>\n1\/2 Cup arrowroot powder<br \/>\n1\/2 Cup almond meal<br \/>\n1 Tsp + 1\/4 Tsp (for greasing) olive oil<br \/>\n1\/2 Tsp salt<br \/>\n1\/2 Tsp dried basil<br \/>\n1\/2 Tsp dried oregano<br \/>\n1\/8 Tsp freshly ground black pepper<\/p>\n<p>For Sauce:<\/p>\n<p>3\/4 Cup packed fresh Basil leaves<br \/>\n1\/8 Cup pine nuts\/walnuts<br \/>\n1 Tsp Lime juice<br \/>\n1\/4 Cup olive oil<br \/>\n1\/4 Tsp salt<br \/>\n1\/4 Tsp freshly ground fennel seeds<br \/>\n1\/8 Tsp freshly ground black pepper<\/p>\n<p>For Topping:<\/p>\n<p>1\/8 Cup sliced kalamata olives<br \/>\n1 Tablespoon grated fresh mozzarella cheese<br \/>\n1 Tablespoon grated fresh paneer cheese<\/p>\n<h2>Method<\/h2>\n<p>For Pizza base:<\/p>\n<p>1. Mix all ingredients in a mixing bowl together to make a dough<br \/>\n2. Grease your rolling pin with olive oil and roll the dough to form a circular base of about 8 inch on a parchment paper. (You can use your greased hands and pat the dough to make the circular base)<br \/>\n3. Place the parchment paper with the rolled base onto a pizza tray and bake it for 17 min. at 425F<\/p>\n<p>For Sauce:<\/p>\n<p>Place all ingredients in the food processor and puree to a slightly chunkier consistency<\/p>\n<h2>Assembly<\/h2>\n<p>1. Spread the sauce on the baked pizza base<br \/>\n2. Top with olives and both the grated cheeses<br \/>\n3. Bake at 425F for another 7 min. until cheese melts<br \/>\n4. Optionally, if you like, broil for another 2 min<br \/>\n5. Garnish with fresh basil leaves and serve hot<\/p>\n<h2>Note<\/h2>\n<p><em>Arrow root Powder:<\/em>\u00a0It\u2019s a powder obtained by drying and grinding of starch from the rhizomes of several tropical plants, traditionally Maranta Arudinacea. It is used as a thickener in many recipes.
